Raw Taco Salad

A week ago I decided to take on the raw food diet challenge. Not 100% but 75% -80% of my diet would be totally raw and natural, so nothing processed, packaged, etc. For the most part I have been doing well but I must admit I haven't given up my favorite cookies or ice cream but it's a work in progress. 

I have come across the most awesome raw recipe, like ever. Seriously. 

Introducing... the raw taco salad. Be prepared to have your taste buds rocked. Go home and make this now. 



Ingredients: 

1. A large head of lettuce, shredded
2. 1 lime
3. Walnut Taco Meat

2 cups walnuts, soaked 4-6 hours
1 tbsp dehydrated minced onion
2-3 tbsp chili powder
1 tsp cumin
1/2 tsp oregano
1/2 tsp salt
pinch of cayenne

4. Easy Guacamole

2 small, ripe avocados
1/2 cup tomato, diced
3 tbsp red onion, diced
Juice of 1/2 a lime
salt to taste

5. Pico de Gallo

2 large tomatoes, seeded and diced
1/2 medium red onion, diced
1/4 cup of cilantro, minced
1 tbsp lemon or lime juice
1 jalapeno, seeded and minced
salt to taste

6. Cashew Sour Cream

1 cup cashews, soaked 4-6 hours
1/2 cup water
2 tbsp lemon juice
1 tsp apple cider vinegar
1/2 tsp salt

Method


3. Walnut Taco Meat


Blend walnuts in a food process until they break down into small crumbs. Do not over mix, they will quickly form a paste. Add remaining ingredients and pulse a few times until well blended. Remove from processor and set aside.

4. Easy Guacamole

In a small bowl mash the avocados until fairly smooth. Add remaining ingredients and mix together.

5. Pico de Gallo

Mix together all ingredients in a small bowl.

6. Cashew Sour Cream

Blend the soaked cashews with 1/2 cup water in a food processor or powerful blender until very smooth. Add remaining ingredients and blend until well combined.

Welcome. I am inviting the blogging world to take a sneak peek into my life as I journey through my last year of nursing school, experimenting with my passion for food, and the transition from school to finding a nursing job far far away from the rest of my family.

First off. I am not a writer, so I apologize up front. I will do my best and I promise to proof read. :)

About me. 20 something Georgia Peach, apparently one of the few "atlanta natives," according to my patients. I am in nursing school and graduating in december. My dream is find a job out West, big step considering my whole family lives in georgia, and I know NO ONE out west. I work at a running shoe store, Big Peach Running Company where I talk all day about running, running shoes, and the like. 

Exercise is a big part of my life. But it wasn't always like that. I grew up pretty active, but not with anything related to sports. I danced for 13 years which kept me active enough to eat whatever I wanted. Then college happened. I didn't gain the freshmen 15 but I felt and looked different. Dance was missing and I felt like a bump on a log. One day I decided to run. I bought some random running shoes and ran my neighborhood. I hated loathed it. I would do it every now and then but definitely not consistently. Then there was a boy. He introduced me to his family who did everything running. They (including boy) were animals. I remember going to one of his and his family triathlon races to watch and I was baffled. Who swims a mile, bikes 50 something miles, then runs 13.1 miles? They did, and it was awesome. His family did it all, and still does. Marathons? Check. Half Ironmans? Check. Full Ironmans? Check. Ultramarathons!? check. So there it began, my journey into endurance sports. Since meeting this boy and his family I have done 6 or 7 half marathons, quite a few sprint and olympic triathlons, one half Ironman, and one ultramarathon. I am no longer with this boy but my life will forever be changed by his wonderful passion for racing, running, and other endurance sports. I am forever hooked, and grateful. 

Food. Yes, I am one of those bloggers. {I will take pictures of my food and post them, because they are pretty. } I did not grow up in a family where my parents cooked, like ever. Our meals were tv dinners, pizza, and easy casseroles. My passion for healthy cooking just popped up in the last year, I am not sure what happened but I think it all started with experimenting with healthy pancake recipes. I could make pancakes for breakfast, lunch, and dinner everyday (topped with nut butter of course). Now I cook mostly natural ingredients, actually right now I am doing a 80% raw diet but that won't last long I am sure. I am so passionate about cooking with natural ingredients and minimal processing and even considered going to school for nutrition.

So why a blog? I blew Instagram up with my food pictures. I would always post pictures of my creations until a friend asked me to post the recipe. If any of you use instagram, then you know writing a recipe on is just not possible. So this is why I am blogging. To share my love for food, trying out new recipes, posting about my food failures that I am sure will happen often, and maybe even keeping myself accountable with training for ironman races by putting it out in the public. Eeek!
